Miyata is a pickle processing company attaching importance to Nagasaki produce and keeping a good record of accomplishment of lactic-acid-fermented pickles. Miyata uses Chinese cabbage, takana (leaf mustard), cucumber, and ginger as well as tojinna (also known as Nagasaki cabbage) acquired from contracting farmers in Nagasaki.
